Sprout Artisan Bakery Takes Albion by Storm

Sprout Artisan Bakery, the much loved name behind those buttery croissants and perfect sourdough loaves on James Street, has just opened a second location, this time in Albion. While many Brisbane locals will know Sprout for its always busy corner spot in the Valley, this new space is part of something bigger. A custom designed headquarters and retail outlet rolled into one.

Housed inside Craft’d Grounds on Collingwood Street, the new location is a clever blend of function and beauty. It’s not just a bakery; it’s a behind-the-scenes look at the magic. Through floor-to-ceiling windows, you can actually watch the team in action, kneading, shaping and layering every loaf and pastry by hand. The fit out is minimal and warm, all brick and terrazzo, giving the space an understated elegance that lets the pastries do the talking.

This new Albion hub means bigger production capacity, so expect all your favourites to keep rolling out likes of the slow fermented sourdough, cinnamon scrolls, fruit danishes, custard tarts and those stacked croissant toasties filled with prosciutto, tomato and bocconcini. There’s also talk of new savoury additions on the way now that there’s room to experiment.

For fans north of the river, this new spot is a bit of a dream come true. Easier access, more parking and still the same small-batch, crafted with care approach that made Sprout famous. And yes, the original James Street bakery is still there, still baking, still packed. The Albion launch doesn’t replace it, it just means there’s more to love.

To celebrate the opening, Sprout is throwing a little something special this weekend. Expect a family friendly morning with games, prizes for the kids and one seriously epic giveaway – five lucky winners (and a plus one) will score a spot in an exclusive sourdough masterclass with the team. You’ll have to be there in person to enter, so consider this your official excuse to pop by, grab a pastry and soak up the scent of fresh bread straight from the oven.
