A distillery worth leaving the beach for (yes, really)
Look, we love Kingscliff. Beach, sun, repeat. But every now and then, it’s worth swapping sand for something a little greener, and Husk Farm Distillery makes a strong case for it.
Set on 150 acres in the Tweed Valley, this isn’t a quick sip and go situation. Husk is one of the few true farm-to-bottle distilleries in the world, which means what you’re drinking is grown, made and poured right there.
First things first, Ink Gin. It’s the colour-changing one made with butterfly pea flower, and yes, it does the whole shifting shades thing. It’s balanced, lightly floral and not just there to look pretty. If you’re more of a rum person, time your visit right. When the sugarcane is ready, the distillery shifts into rum mode using cane grown on site.

You can wander the grounds with a drink in hand, book a Tasting Trail, or head straight to the Cellar Door for cocktails and a bite. The Croc Bites with yuzu mayo have a loyal following for a reason.
For a long lunch, head to Planter’s Kitchen, the on-farm restaurant, where the menu celebrates local produce with vibrant Southeast Asian influences. Highlights include the free-range beef cheeks, slow-cooked in Chef Suchada’s master stock – the special ingredient? Husk Rum, of course. Pair it with one of the distillery’s award-winning cocktails and you’re set for a seriously memorable afternoon.

If you’re after something more relaxed or travelling with kids, book a spot on The Lawn for casual food and drinks in a beautiful open setting. Walk-ins are always welcome for a cocktail or tasting flight, making Husk an easy and rewarding stop while exploring the Tweed.
