A new European-leaning wine and tapas bar has opened in the Kingscliff region, as seasoned hospitality team has unveiled their latest venture, Bar Bruto.
Expect a concise beverage list built around classic recipes, low/no alcohol offerings, alongside a thoughtful exploration of vermouth – Spain’s quietly complex aperitif. “Vermut is one of Europe’s most misunderstood drinks,” says Middendorf. “Served properly – over ice with citrus, a briny snack on the side – it’s vibrant, textural and endlessly drinkable.”
The wine list, curated by Middendorf, will be short, regularly changing and heavily weighted toward by-the-glass options, with an emphasis on natural and low-intervention producers. The intent is discovery without pretension – wines designed to be enjoyed with food, not analysed.
In the kitchen, Argentine-born chef Juan Luis Branto brings a distinctly Spanish-speaking sensibility. Branto, formerly of LaBart, will lead a menu of small plates built on local produce and assertive, seasonal flavours – dishes designed for sharing, layered with texture and acidity, and anchored in technique. FUN.

Bar Bruto is as much about atmosphere as it is about what’s on the plate. A considered music program – curated DJ sets, rare and hard to find mixes, and high-quality studio sound – will shape the rhythm of the room, lending the space the hum of a late-night Barcelona bar rather than a coastal Australian dining room.
For Wilson and Middendorf, the project is both progression and reset. “Innovation has been extraordinary over the past decade,” says Wilson. “But somewhere along the way, the fundamentals – genuine hospitality, detail, the feeling of being known, have slipped. Bruto is about bringing that back.”
Bruto trades Thursday to Saturday from 4pm, 3pm Sunday, with the kitchen closing at 9.30pm Thursday through Saturday, 8pm Sunday
